All her life, my mother wanted busy children. It was very important that her house should remain at all times
clean and tidy.
You could turn your back for a moment in my mother’s house, leave a half written letter on the dining table, a
magazine open on the chair, and turn around to find that my mother had “put it back where it belonged,” as she
explained.
My wife, on one of her first visits to my mother’s house, placed a packet of biscuits on an end table and went

Fuchsia Dunlop is a gourmet (美食家) that’s better at Chinese dishes than European ones, and cooking has
become a way for her to kill time in the “endless lockdown”. She cooks in a very relaxed way, going to the farmers’
market at the weekend to buy seasonal products for everyday cooking-a mix of Jiangnan, Hunan, Guangdong and
Sichuan dishes.
Being raised in a household in Oxford always filled with flavors from Japan, Turkey, Spain, India and Austria,
Dunlop dreamed of becoming a gourmet when she was little. However, her dream did not start to come true until
she came to Chengdu, the capital of Sichuan Province, as a university student in 1994. That was when she began
learning local cooking skills at the Sichuan Higher Institute of Cuisine, while looking for delicious food in the city
and nearby areas. Always keeping a notebook on hand wherever she went, she wrote down the recipes of the dishes
she tasted, which resulted in the publication of her first book, Sichuan Cookery, in 2001. And since then, she has
published four books about Sichuan cuisine.
In 2016, Land of Fish and Rice, about recipes from Jiangnan, was published. In the book, Dunlop describes
Jiangnan, the region south of the Yangtze River, as an area “blessed with a warm climate, fertile land, and lakes,
rivers and coastal waters with plenty of fish and seafood”, and she regards the region as the heartland of the
nation’s gastronomy (美食). Now, a Chinese version of the book is available.
“Food is a representation of culture anywhere in general, but in China it has a particular importance,” Dunlop
says. “China is a place where food has been culturally important since the beginning, so food is a way of
understanding and appreciating China and its culture in general.”

Many international students studying abroad in America have several supposed ideas about American culture.
After visiting the country, many international students revealed the culture shocks they received in America. Here
are some culture shocks in America that most of the international students came across.
It’s surprising to note that kids, the youth, and adults refer to each other with their first names. This is a very
uncommon sight to witness. Many international students might find it surprising and take time to adjust to this
tradition.
Another culture shock is that in the USA there could be only one or two classes a day. Usually, they’re
conducted in the afternoon or the evening. This means the students get enough time to sleep late, wake up around
noon, and have time for different chores. Besides having convenience in the schedule of classes, students also enjoy
long hours of break.
Among the many culture shocks in America, multiple languages are quite common here. Many international
students would move to the USA believing that the only language is English. However, that’s not the case. The
citizens commonly speak languages such as Spanish, French, German, Chinese and others. So if you’re comfortable
in any of the above-mentioned languages, you might get surprises.
Many international students are accustomed to the kilograms, metres, litres, degrees centigrade as the units of
weight, length, volume, temperature, and so on. But they might be perplexed to see a different metric system in
the USA. Here pounds, feet, and Fahrenheit (华氏温标) are usually used as units for measurements. This system is
quite puzzling to comprehend at the beginning for many international students.
The people in the USA are known to be open-minded, helpful and friendly. Many international students might
find various culture shocks in America depending on the background they come from. However, the friendliness
and social conduct of Americans make it easy for international students to adjust to their environment.
