In a summer, twelve people walked into a room designed to test the limits of human survival. Equipped with
heart rate monitors and temperature probes (探头), they waited in temperatures of 42℃, coating their bodies in
sweat. After several hours, their body temperatures began climbing, as the heat cooked them from the outside in.
“Few people have actually experienced temperatures like this,” said Robert Meade, a researcher who led the

a warming climate, we expect that those thresholds will start to be broken more often,” said Tony Wolf, a professor
at the University of Georgia. “The heat waves are larger and they last longer.”
The rising heat has already caused serious harm. Between 1999 and 2023, the number of people dying from
high temperatures in the United States has more than doubled, from about 1,000 per year to over 2,000. During the
same time, nearly a quarter-million people have died from heat worldwide. “People already die from heat waves
now,” Wolf said. “So no matter how the climate changes in the future, it’s important to understand — right now

Many of us have experienced the annoying tears when cutting onions in the kitchen. There are different
suggestions to avoid this, but what does science really say? According to a team of physicists at Cornell University,
it’s all about the sharpness (锐利) of your knife and your speed of approach.
After over five million years of use around the world, onions still cause a problem for our eyes due to a special
chemical. The chemical gives off a sulphur-rich spray (富硫喷雾) when we cut an onion, which travels through the
air and makes our eyes water.
To study this spray, Cornell researchers first built a tool with different steel blades (钢制刀片). They then
painted onion pieces black to watch the shape change after cutting. Using a microscope, they measured the width of
the blade tips, ranging from 5 to 200 millimetres. Then they started cutting the onions at speeds between 0.4 and 2

Their recordings clearly showed that sharper blades produced fewer drops with less energy. The duller (钝的)
the blade, the easier it was to bend (使弯曲) the onion’s skin before cutting. This bending stored energy, building
up pressure inside the vegetable until it cut open — resulting in more juice. In some cases, the drops could break
into smaller aerosol particles (气溶胶颗粒), reaching speeds of about 43 metres per second. As these particles flew
through the air, they created a fine spray that was more likely to make our eyes tear. Meanwhile, faster cutting
speeds produced four times as many particles as slower rates.
Although this research is still waiting for expert review, it offers a useful tip: Using a sharp knife and cutting
the onion slowly can continuously reduce the unwanted effects. So, the next time you’re in the kitchen preparing
onions, remember to use a sharp knife and take your time. Your eyes will thank you — and now you can enjoy
cooking with onions without the annoying tears!
