食品留样标准操作SOP(可直接打印张贴)一、核心操作原则
二、操作流程
1. 取样时机
菜品烹饪完成、出锅分装第一时间取样,全程避开交叉污染。2. 取样规格
3. 容器要求
使用消毒合格、带密封盖的专用留样盒,生熟、荤素分开盛放。4. 密封贴标
取样后立即盖紧密封,粘贴统一标签,注明:菜品名称、留样日期、餐次、操作人。5. 储存要求
留样完成后立即放入专用留样冰箱,恒温控制 0℃~8℃。三、硬性管控标准
- 储存时长:留样食品保存不少于48小时,到期统一清理销毁。
- 冰箱管理:留样冰箱专用专用,禁止存放私人物品、食材杂物。
- 禁止事项:禁止混装留样、禁止中途开盖、禁止常温久放。
