“It was finding academia too “esoteric (深奥难懂的)” that led him to seek out a less
complicated path: to help the world simplify its food,” the famed chef and author Yotam
Ottolenghi said.
His outstanding style of cooking has been accepted across the globe. Focusing on simple
ingredients(原料) and treating food as a way to bring friends and family together, Ottolenghi’s
become a celebrated chef, a best-selling author and a touchstone for home cooks looking to
integrate global flavours into their everyday rotations(轮换).
Having parents who cooked helped shape Ottolenghi’s path. However, it was the sense of
belonging that came with cooking — not family expectations — that truly drew him in. There
was a quiet expectation that he would probably become an academic. But rather than having a
sudden insight about his future path, the 56-year-old chef saw the kitchen as a space for curiosity
and play.
Before making his name in the culinary (烹饪的) world, Ottolenghi studied philosophy butfound the subject matter too “esoteric”. Instead of that very specialized field, he turned his focus
to something simpler, literally.
In 2018, following the success of his Notting Hill café and shop, Ottolenghi published his
fifth cookbook, Simple, distilling all the techniques and preparations that he’d become known
for into something approachable.
Ottolenghi thinks food is a language that everybody understands. The books were a way
for fans of the restaurant and of Ottolenghi’s pared-down, flavour-forward recipes to access that
world at home. He hopes to be part of a movement to take cooking from being an unpleasant
task into something healing and enjoyable.
That pared-down approach has even turned “Ottolenghi” into an adjective term— used to
describe food that offers high influence with few ingredients(原料) and simple techniques.
He remains humble, putting the focus back on his desire to make cooking comforting.
“Food really is one of those activities that shouldn’t cause anxiety. It’s as simple as that,”
he said.

Like a literal breath of fresh air, so-called “micro-forests” represent a green practice,
boosting the quality of life in many of the world’s polluted and overcrowded urban centers.
These small areas of densely (稠密地) planted woodland trees, also known as mini-forests
or pocket forests, allow communities to manage the effects of climate change in a small way,
but offer enormous benefits to the environment and local people, as they restore soil, air and
water quality. These mini-forests are proving a magnet for various animal and plant species,
which offer human beings the chance to learn more about nature. Magically becoming self-
sustaining over time, they are a way to make reimagined urban life a reality.
Significantly, mini-forests, as one of their nonprofit facilitators SUGi outlines, serve to
build social bonds in communities as well, as they come together to enjoy and sustain new
natural settings. They can also regenerate and beautify neglected (被忽视的) plots in cities
such as former basketball courts, and disused parking lots and playgrounds, for instance.
According to the UN’s State of the World’s Forests Report from 2020, over 440 million
hectares (公顷) of forest have been lost to other uses since 1990. Now, more than half of the
global population lives in urban areas, but the access to green spaces is limited. The good news
is that micro-forests in cities can offer an important chance to fight against deforestation and
enlarge green spaces.
Euro News details some of the many exciting micro-forests that have taken root globally.
Nonprofit Earthwatch Europe, for instance, has planted 285 of them since 2022. Their plots are
made up of 600 trees. A tree-planting program aiming to restore biodiversity and reintroduce
native species, SUGi, has created 230 pocket forests in 52 cities around the world, from Toulouse
in France, to Madrid in Spain, and Saint George in Romania.

A company called Colossal Biosciences has created thick-haired mice that they are
calling"Colossal Woolly Mice". These mice are a step toward the company's goal of creating
the extinct woolly mammoth (猛犸象).
Colossal focuses on replacing extinct animals that went extinct long ago. Its main project
is to recreate woolly mammoths. These mammoths, which looked like hairy elephants, died out
about 4,000 years ago after the last ice age.
Colossal isn't trying to bring woolly mammoths back to life. Instead, it wants to change
Asian elephant DNA to create an animal similar to a woolly mammoth. The company believes
this could help restore balance to the Arctic environment. Some scientists question this.
Actually, working with Asian elephants would be very difficult. They are endangered and
take 22 months to have a baby. So, Colossal focuses on mice instead. Mice are more manageable,
cost-effective, simpler to handle, and have a quicker reproductive cycle.
For the experiment, researchers looked at how woolly mammoths stayed warm, focusing
on their long, thick hair. They compared mammoth DNA to elephant DNA.Using CRISPR (a gene-editing technology), they edited mouse DNA to change not just one
gene, but as many as seven genes at one time. This made the experiment special.
The results were striking. Lead scientist Beth Shapiro said,“We ended up with adorable
mice that have longer, woolly, golden coats.”This is good news for Colossal. Since they plan to
use elephant DNA to create something like a mammoth, they will need to edit many genes—
perhaps as many as 85. The company is pleased that it has been able to target these genes for
hair so accurately.
Many experts are impressed with Colossal's ability to edit many genes at once. But not
everyone thinks the woolly mice are a big deal. Some people question the company's plans to
bring back extinct animals. They say it might be better to help animals that are currently
endangered. However, Colossal believes its work could be of assistance in many situations,
including protecting endangered animals.
