Bacteria are the one of the main food prisoners. So, to get food on the table safely, you need to know and
follow the rules for food care.
KEEP FOOD HOT
High food temperatures (165℉to 212℉) reached in boiling, baking, frying, and roasting kill most food
poisoning bacteria. If you want to delay serving cooked food, though, you have to keep it at a holding temperature
— roughly 140℉to 165℉. Steam tables and chafing dishes are designed to maintain holding temperatures. But
they don’t always keep food hot enough. So it’s not wise to leave hot food out more than 2 hours.
When cooked food is left out unheated, the possibility of bacterial growth is greater, since the food quickly
drops to room temperature where food poisoners multiply.

Imagine a customer-service center that speaks your language, no matter what it is. Alorica, a company in
Irvine, California, which runs customer-service centers around the world, has introduced an artificial intelligence
(AI) translation tool that lets its workers talk with customers who speak 200 different languages and 75 dialects. So
an Alorica worker who speaks, say, only Spanish can deal with a complaint about an incorrect bank statement from
a Cantonese speaker in Hong Kong. And it wouldn’t need to hire an employee who speaks Cantonese.
However, Alorica isn’t cutting jobs. It will increasingly hire those who are comfortable with new technology.
Potentially, the threat: Perhaps companies won’t need as many employees — and will cut some jobs — if
chatbots can handle the workload instead. Consider Suumit Shah, an Indian businessman who caused an uproar last
year by saying that he had replaced 90% of his customer support staff with a chatbot named Lina. The move at
Shah’s company, Dukaan, which helps customers set up e-commerce sites, reduced the response time to an inquiry
from 1 minute, 44 seconds to “instant”. It also cut the typical time needed to solve problems from more than two
hours to just over three minutes.
Similarly, researchers at Harvard Business School found in a study last year that job postings for writers,
coders and artists decreased greatly within eight months of the arrival of ChatGPT.
But being exposed to AI doesn’t necessarily mean losing your job to it. The Swedish furniture retailer IKEA,
for example, introduced a customer-service chatbot in 2021 to handle simple inquiries. Instead of cutting jobs,
IKEA retrained 8,500 customer-service workers to handle such tasks as advising customers on interior design and
fielding complex customer calls.
The experience at Alorica and IKEA suggests that AI may not prove to be the job killer that many people
fear. Instead, the technology might turn out to be more like breakthroughs of the past—the steam engine, electricity
and the Internet, which get rid of some jobs while creating others and probably make workers more productive in
general to the eventual benefit of workers themselves, their employers and the economy.

Our mood brightens as nature wakes up from winter, with blooming trees coloring the scenery in soft, pretty
colors. Near my house is Kairaku Park, one of the biggest gardens in Japan, famous for its vast collection of almost
10,000 plum trees. I find myself in the enviable position of having them all outside my backyard, taking advantage

Approaching with the intention to help, I found the mother’s protective instincts in full force. She was
fiercely guarding her young, preventing any approach. I sought assistance from an elderly gentleman sitting on a
nearby bench, “Excuse me, the swan baby seems trapped and unable to move. I wish to lend a hand, but the mother

Insects cause billions of dollars of damage to crops every year, driving farmers to apply pesticides on an
industrial scale, at huge expense and often with unwelcome ecological side effects. They take this, carpet-bombing
approach because they lack information about where and when it is best to hit pests, and nobody wants to use too
little pesticide and thus risk losing crops. Technologists at FarmSense, a firm in Riverside, California, hope to
change that.
The established approach to detecting insect pests, moths in particular, is to employ pheromone-baited (以外
外激素为诱饵的) sticky traps. Pheromones are chemicals which animals use to communicate — and especially to
attract members of the opposite sex. An appropriately baited sticky trap gives a fair idea of the number and type of
pests around, but not with sufficient detail for the accurate application of pest control measures. FarmSense’s
researchers believe they can do better.
The company’s device, FlightSensor, has been in full-scale tests on farms since 2020 and is about to be made
generally available. It does, not trap insects. Rather, it detects them with a laser as they fly by. The developers’
finding was that the shadows of passing wings produce the same signal as the sound of the wing beats recorded by
a microphone.
For the first group of targets the results are impressive. Navel orangeworm moths, in particular, are a
common pest of almond and pistachio trees both important to Californian agriculture. FlightSensor can identify
them accurately more than 99% of the time. And the device is still improving its capability, and adding new species
as it gets more data. Sometimes it can distinguish insects which, to a human eye, look identical.
Farmsense’s approach works, better than microphones for recording, wing beats because the insects under
investigation are quiet and the sound they send out is thus easily lost in background noise. They are easily
detectable by laser, though. And while sticky traps are at least a solution for large moths, the FarmSense sensor
picks up extremely small moths. From farm to lab, then, identifying insects with FlightSensot may soon be all the
rage on farms.
